Introducing the Crabber and the Chef, a unique collaboration between Tweed Eco Cruises and acclaimed hatted chef Steven Snow of Fins Restaurant.
In this immersive experience, join a professional fisherman who will take you on an unforgettable adventure to the upper reaches of the Tweed River and Terranora Lakes to offer you a behind the scenes look at how mud crabs are caught, prepared and graded to be taken to market.
Enjoy locally sourced morning tea on the purpose-built vessel while taking in the scenery of the Tweed Valley – one of the most biodiverse regions in Australia.
The haul of mud crabs will be taken to Fin’s Restaurant where Steven Snow and his team will greet you with a welcome glass of wine. “Snowy” and his chefs will prepare your catch with the freshest seasonal ingredients sourced from the Northern Rivers. He will then join your table to take you on a food journey of the regions produce and how it is prepared from the pot to plate.
This unforgettable cruising and dining experience will tantalise your tastebuds and provide an in depth look at the commercial fishing industry while connecting you to the local food scene and regional restaurant leaders.
To entice the tastebuds that little bit more for this wonderful event, we will be serving up a delicious homemade Lemon Myrtle Slice for morning tea and as well as catching some mud crabs, we will be dining on local oysters while we cruise up around the Oyster leases of Terranora lakes, (with the addition of lemons/finger lime from Snowy’s garden. Going to the oyster leases will allow people to see the commercial industries that work out of the river and get further knowledge of what is in their back river yard!
